Bruschetta with tomatoes and basil

This easy but tasty italian finger food can be garnished with many different seasonings,from the traditional tomatoes and basil to the light peach,ricotta cheese and Parma ham.

 

Ingredients for 4 servings:

- 4 slices of bread

- 2 ripe tomatoes

- fresh basil

- evo

- pepper

 

Preparation

Grill the bread,rub with garlic and garnish with chopped tomatoes.Season with extra-virgin olive oil,salt,pepper and a fresh basil leaf on top.

Caprese salad

This is the typical Italian summer salad ,fresh,delicous and very easy to prepare.

- 5 ripe tomatoes

- 2 fior di latte or buffalo mozzarella

- basil

- oregano

Preparation

Cut tomatoes and mozzarella and alternate the slices on a plate,sprinkle with oregano,salt and extra virgin olive oil.

- 300 gr white rice

- 1 jar of pickled vegetables

- 2 cooked frankfurter

- 50 gr diced baked ham

- 1 tuna can

- olives

- emmenthal cheese

- 2 hard-boiled eggs

 

 

Preparation

Put the pickled vegetables and tuna,after dripping them,in a large bowl.Add the boiled rice,cooled under running water,cubed cheese,ham and frankfurter.Garnish with olives and sliced hard-boiled eggs.

Ingredients for 4 servings:

- 300 gr boiled spaghetti

- 6 eggs

- 3 tablespoons grated Parmesan

- 1/2 cup of milk

- cubed bacon

- pepper

 

Preparation

Boil the pasta until firm to the bite and season with evo,better to use leftover spaghetti with tomato sauce.In a large bowl beat the eggs with milk,Parmesan,salt and pepper until smooth.Toss the stir-fry cubed bacon with the spaghetti and add to the eggs bowl stirring gently.Cook the omelette and serve.

Panzanella

Panzanella is an easy recipe,without cooking,with all summer fresh ingredients.You can use leftover bread or traditional wheat "freselle".

Preparation

Wet the bread or freselle with cold water.Combine in a large bowl the sliced tomatoes,cucumber and onion,season with evo,salt and chopped fresh basil leaves.Add the squeezed bread and toss gently.Put the bowl in the fridge for 30 munutes and serve. .

- 300 gr of leftover bread or 4 freselle

- 3 riped tomatoes

- 1 fresh cucumber

- 1 Tropea red onion

- fresh basil
